The gift that you have just shared with the family, friends and loved ones is so touching and heart-felt that I was deeply moved. I loved to read Olga's writings; she was such a loving soul. I thought of her fondly just yesterday when I snuggled under a little yellow knitted throw that she made for me a few years ago. Thank you for this post. I think it settles the hearts and minds of many knowing that as you so eloquently stated, there are so many good chapters in Olga's book, I simply choose to remember the best ones. Now let's turn to food, (i'm a foodie too), so in trying to eat more healthy food, here's a good recipe that I tried on a bed of mixed salad greens. I have to be creative because I take lunch to work, so I don't want to be caught eating a lot of processed foods. So here we go. Take 1 cup brown rice (Uncle Ben's has an amazing 1 minute cup that you can buy) Add 1/4 c mandarian orange slices (get the one with no/low sugar) 2 Tbs walnuts (yummy full of omegas) 1/4 c green, red and yellow sweet peppers (get creative, if you dont have one, worry, just add what you have) 2 Tbs raisins 1 chopped scallion 1 chopped celery stalk Vinagarette 1 Tbs olive oil 1 Tbs cider vinegar 1 tsp orange or mandarin juice 1/2 garlic clove 1 tsp low sodium soy sauce dash salt/pepper Enjoy a healthy lunch or dinner May the Lord continue to bless and keep you and shine His light upon you.
